Sparkling Cuvée
A blend of Chardonnay with bright fresh citrus, floral characters plus a small component of Pinot Noir to add complexity and depth. Harvested in the cool of the morning when the fruit is crisp and pristine, then pressed and fermented to retain the beautiful primary fruit and freshness.

'Backyard' Riesling
Vibrant aromas of citrus, musk and a hint of spice. The palate is juicy with driving acidity complemented by balanced, attractive fruit sweetness and a menagerie of citrus and stone fruit flavours. It has a long, linear structure and delicate balance of sweetness and acid.

This wine is made from 5 specific rows of vines; the 5 rows that present the view of the most amazing sunrise over the hills. This blend of Cabernet Sauvignon and Merlot displays attractive aromas of fresh berry fruits with a lovely dry savoury finish.

'Eighteen Fifteen' Chardonnay
The grapes were picked at night to retain freshness and pressed immediately. It is a modern Australian chardonnay with complex, integrated and subtle French oak. It is finely structured with fresh acidity and precise dark citrus flavours.

'Three Boys' Cabernet Blend
A beautifully balanced blend of Cabernet Sauvignon (65%), Cabernet Franc (30%) and a touch of Merlot (5%). Very varietal with a medium bodied palate and long, lingering flavours, balanced with subtle oak and silky tannins

'Block 14' Chardonnay
Our exception Block 14 is a showcase of our vineyard. The grapes were fermented with 100% grape solids and only minor levels of juice fining. It was transferred to a combination of new and older French oak puncheons and hogsheads including Gillet barrels from Burgundy. Fermentation was then completed in barrel with regular lees stirring to develop complexity and texture. 50% malolactic fermentation was encouraged to complement the stunning purity of this single Block wine.

'Thomas' Chardonnay
This is a wine made to express the regionality of Orange. It was harvested on the 5th April and settled overnight prior to being transferred to new and older French oak puncheons (500 litres) and hogsheads (300 litres) including Seguin Moreau barrels. After fermentation, the lees were stirred regularly for several months to develop palate weight and texture. With 75% Malolactic fermentation, the wine was blended and returned to barrel to mature prior to bottling.

'William' Pinot Noir
Named in gratitude to three Williams who had a profound impact on our region, on Mayfield, and on me. 100% hand harvested, with a component gently de-stemmed and fermented in 2 tonne open fermenters. Another parcel was fermented carbonically. Whole bunches were kept separate, covered and left for ten days. This resulted in a wine that’s refined with a beautiful gamey character.
