LIMITED RELEASE. Named in gratitude to three Williams who had a profound impact on our region, on Mayfield, and on me. 100% hand harvested, with a component gently de-stemmed and fermented in 2 tonne open fermenters. Another parcel was fermented carbonically. Whole bunches were kept separate, covered and left for ten days. This resulted in a wine that’s refined with a beautiful gamey character.
